Biryani and Beer Event at Radission

Biryani is derived from the Farsi word ‘Birian’. Based on the name, and cooking style (Dum), one can conclude that the dish originated in Persia and/or Arabia. It could have come from Persia via Afghanistan to North India. It could have also been brought by the Arab traders via Arabian Sea to Calicut. The word Biryani is derived from the Persian word Birian, which means ‘fried before cooking’ and Birinj, the Persian word for rice. There is various theories related to the origin of this scrumptious dish. Many historians believe that biryani originated from Persia and was brought to India by the Mughals.



Since then this widely loved dish has continued developing for 5 hundred years now and is still continuing its way there. The biriyani from different regions are different form one another. They taste different and they are cooked in a different way. Some chefs have their own rendition of recipes for biryanis and some follow the traditional method.


As chef Utpal Mandel says, “there are two types of biryani; ‘kachha’ and ‘pakki” biryani. ‘Kachi’ means raw; the raw meat is cooked along the rice, as in the rice and meat cook together. ‘Pakki’ biryani on the other hand, the meat has to be cooked beforehand and then added to the rice.”
